We have used the ‘saignee’technique to ‘bleed off’ juice from our must of Cabernet, Shiraz and Durif. The juice underwent a partial fermentation before fortifying with a neutral grapespirit. The wine was matured in older French and American oak barrels before blending, filtration and bottling.

Buyers: To buy wine via the website, the buyer must be at least 18 yearsof age, be located within Australia and specify a delivery address withinAustralia. Under law, alcoholic beverages can only be sold or supplied topersons aged 18 years of age or over. By placing an order, the buyer confirmsthey are at least 18 years of age. If buying wine as a gift, the recipient mustalso be at least 18 years of age. The courier will request some form of ID ifthere is any doubt about the age of the recipient on delivery. If thatrecipient is unable to produce appropriate ID, the courier cannot leave the wine.
